My last smoke was a giant Chuck roast requested by a buddy out visiting from Brooklyn. He's a well known pizza guy. Can anyone guess who he is?
One of the many pizza's that we cooked on the wood fired pizza oven, sorry I didn't get a picture of it this time.

I can easily say that the fresh made mozzarella, sauce, and the pizza dough that he makes is flat out out of this world. And it's amazing to cook pizza's in 80 to 90 seconds, and they turn out SOOOOO GOOD!!!!!!!!

The guy has forgotten more about pizza making than I'll ever know. I finally got to witness him work a crowd, I knew he would be great because of his personality. But what I wasn't expecting is how well he relates with people of all ages social statuses.
And the way he can throw a pizza dough is amazing. And I finally got him to kick down his sourdough starter that has collected natural yeasts from all over the world.
I could eat his pizza dough untopped, it's that good.
