Been enjoying all the catfish I have been catching. My friends wife has had a bunch of health issues over the last couple months, but things settled down enough that they wanted to do a dinner. I said,"no problem. I have fresh catfish." I have made this before. Really good marinade for catfish. First- the board:
Coppa di Parma (2023) and Calabrian Soppressata, Dubliner Irish cheese, Smoked Gouda Cheese, first fresh figs off the tree...

Que-view. I over cooked the fish slightly. My buddy did some work on the green egg and it runs a little hotter now than it use to. Had to close the bottom vent down more than what use to be normal. But now I know how she runs after the repair job.

Caprese Salad; Arugala, fresh home grown tomato, fresh mozzarella, fresh basil, Balsamic glaze...

The plate:

Grilled Dijon catfish, steamed Broccoli with smoke gouda cheese, and grilled red bell pepper (we were going to do garlic wilted spinich, but someone forgot to buy the spinach..not to be named LOL!) Served with a nice 2024 Chateau Ste. Michelle Chardonnay.

yea i bet tats good there!

i have had the pleasure of battling some catfish lately. 3 of them grabbed my crappie jigs in the wood this week. great fight and great lunches. :)

godd*** I miss fresh off the tree Louisiana figs.
Tree is absolutely loaded this year with figs. Those were literally the first 4-5 figs off the tree. Tree got 'cold tip pruned' with a cold snap, and bushed out at the ends...8-10 new limbs all loaded with figs. I swear each of those old limbs that bushed out easily has 40-50 figs...and the small tree has 12-20 of those. If I can keep the birds off of them, gonna be good pickings this summer.
