Great idea. Those look killer. I may have to stop buying St Louis.
Thanks Brian ! Yep I buy them because they are usually cheaper. Real easy to trim with a sharp knife and you can get some extra meals out of them that way
 
Those look great Travis. Unfortunately/fortunately here the tips get smoked when I'm doing the ribs. Sort of a treat for the cook.

Those Carnitas from Rib Tips are a great idea and look delicious. We usually make Carnitas from a Butt. However, your post reminds me that I have a bag of Tips in the freezer...JJ

Thanks JJ! Ive made them from a butt also. I will say the added collagen from the rib tips is nice. it definitely makes a difference in the end product.

Looks good . I've been saving the trim from spares too . I buy the 3 packs and save the brisket section . Just made 2 1/2 pounds of sausage out of it yesterday .
I'll have to try it for tacos . Nice work .
 
Heck yeah thats a great idea for the beef rib tips!

Running a couple days behind due to Tracy's schedule but I've got the monster beef ribs in the slow cooker at last. These should be pretty good...at least I hope so. Tracy gave me a big smile when I told her what I was up to so they better be good :emoji_laughing:

Taco Tuesday was crispy rib tip carnitas.
Ive been saving my rip tips that i cut from spares a lot. They are awesome to just throw in the crock pot so dinner is ready when you get home. This time I did them "carnitas style"

In the crock with salt,pepper,oregano,cumin some diced onion and minced garlic.

Sqeeze in a couple oranges and lime then drop them in.View attachment 474613

About 10 hours later on low I took them out. Pulled apart and discard any cartilage or bones. Then back into the crock.View attachment 474614View attachment 474615

Then when its time to build the tacos pull out a portion and fry in its own fat until it gets some crisp on it.View attachment 474616

Topped with some Pico and avacado

Very tasty! Not my normal style tacos but was a very nice change for once.
