I will say the added collagen from the rib tips is nice. it definitely makes a difference in the end product.Those Carnitas from Rib Tips are a great idea and look delicious. We usually make Carnitas from a Butt. However, your post reminds me that I have a bag of Tips in the freezer...JJ

Ive been saving my rip tips that i cut from spares a lot. They are awesome to just throw in the crock pot so dinner is ready when you get home. This time I did them "carnitas style"
In the crock with salt,pepper,oregano,cumin some diced onion and minced garlic.

Then when its time to build the tacos pull out a portion and fry in its own fat until it gets some crisp on it.View attachment 474616
