I fat fingered my post. Cleanup is great with my group. We have one guy we call Mr Mom. He cleans almost as fast as we can make a mess.

Friend: well, there will be butts involved
Other friend: you should see how the casing goes on...

Almost 17 hours.  I plan to try some of it tonight and see how it is.

Gary, let's see about gathering some folks up for a day or so in East Texas this spring.

I've had them go longer than that before, but SS is one thing you can't rush without heartache.

They freeze well, I like to vac pack them prior to freezing.

10% cheese by weight. For every 5 pounds of meat, we added 1 Tbs whole peppercorn and 1 Tbs mustard seed.
