corn husks

I did these two years ago to take hunting. The corn husks give a good flavor.
 
Here is my recipe for that. It's great I always get rave reviews. It's a bit on the spicy side though. You can peel the husks back and eat them like a corn dog or something.

Jims Sausage in corn husk:

4lbs Hot Italian Sausage

½ cup Jalapeños diced

½ cups Red Bell Pepper diced

1T Fennel seed lightly ground (leave some whole)

1T Smoked Paprika

3T Cumin seed lightly ground (leave some whole)

1+T Mustard Seed whole

1t Onion Powder

1t Cayenne Pepper

1t Pepper

3T Cilantro dried or fresh

2T Red wine vinegar

1t Coriander ground

1t Garlic Powder

½ to 1C ice water

¼ lb high temp Jalapeño cheese cubes

1 package Corn Husks for Tamales

Mix all except the husks to a sausage mixture and let rest for a few hours or overnight.

Soak corn husks in hot water for 1hr.

Roll sausage mixture in husks tying ends with strips of husk

Smoke at 225 until internal temp of 155* 2-3 hrs? Keep warm or refrigerate and reheat as needed.

I've seen it, but never have done it yet.

They look better than those over-sized, fat, masa-laden tamales some folks like?
