Any of you moving to whole grain? I have been currently doing 50/50 whole to bread flour. Recently learned about using ascorbic acid to make wheat rise better. Have to play with that as my 100% loafs were dense.

Found a local farmer selling dirty, right of out the combine, wheat. I have three seed cleaners, 1 repaired, 1 borken and selling and one manual one I am repairing. I bought 100# of soft white wheat and cleaned it the week before. He had hard red in the silo and not bagged and self service, felt bad and gave me to 60# bags for $18. Her eis is cleaned and I have to hand pick it for seeds still in husks, I will probably feed to the chickens those.
