Pork ribeye chops, marinated in Coca-Cola for 4 hours, then dusted with our cajun blend, then a finishing layer of our steak blend. Was a great combination of flavors getting some sweetness from the Coke, a little heat from the cajun rub, and a nice savory/umami boost from the steak blend. Smoked at 250° until an IT of 140°, then wrapped in foil with a knob of butter to rest. And as were reaching the end of corn season here, a nice ear of super-sweet.

A darn good alternative to a steak when beef prices are high. My youngest, who is a steak connoisseur, even said she'd rate this up there with a good steak. 😆

FYI:
Dr Brown makes a really good black cherry soda !
I figured its be really GOOD! using it ?
No? I have not used it yet !?
Good soda though.

looks tasty! ill have to try that. wife has a friend that makes roasts with root beer.

who remembers the coke bbq ribs in electric skillet. mom used to make that in the 70-80s. looking back at all the sugar i used to eat its no wonder im like i am today. lol

That looks great Shawn! good way to use up that soda you are not drinking. Bookmarked for sure, especially since pork is affordable, at least for now.

Is a ribeye pork chop just a thick cut chop? bone in?

Wow, my kind of meal there Shaun. Yep, bookmarked for sure. On next weeks menu list. Many thanks for the inspiration.

Looks fantastic! I have never marinated anything in cola of any kind...I feel like I might need to try it.

It comes from the rib section of the pork loin, more specifically from the center portion right above the shoulder/blade area down to the lower loin. Has a large center eye of lean loin muscle surrounded by a thin layer of fat and often a cap/spinalis. Sometimes you'll find them bone-in, but seems to be a rare find down here in SETX, but boneless are usually pretty common.

Now I'll spare you me nerding out on butchery...can you tell I spent my teen years working in gramps' meat market? 😆
