Did another skirt steak as usual,smoked to 115 in the MES with char/hickory dust and then seared on the Q to finish.

Came out perfect as far as doneness.Besides the spog I also added some magic habenero dust and I put way to much of it.For most folks it would inedible including the better half.Into a chili this meat will go.

Similar thing happened to me a while back in a pork shoulder for pulled pork. Grabbed the wrong seasoning and was too spicy for most people there. Things happen!
 
Nice recovery. We are big fans of skirt steak in this house. Great repurpose, Be sure to mark it as SPICY! LOL
 
Norm , it looks good bud . I'm with Chas , give it a sour cream cool down . Dang that sounds good .
I used some Reaper powder on dried beef one time . Brought it from the smoker to the house . Got a whiff of it and it took my breath away . It was hot , but couple days later was really good .
 
Looks perfect. We keep the hot stuff separate from the rest of the spices. My Wife has Zero Tolerance for Heat. I spice stuff up at the table...JJ

Thought about the sour cream route but there's the lactose issue.
