At $10/Lb it is a pretty good price in my area for skirt steak. I marinaded them for a few hours in my fajita mix that I have previously posted.
I tossed them on the pit with a cylinder filled with onion and bell pepper. There were a couple of Yukon Gold potatoes wrapped in tin foil in the coals.
Wood used was Mesquite, coastal Oak and Hickory on top of the lump charcoal to get lots of smoke flavor.
They were cooked to somewhere between medium rare and medium. Someone needs to make a new term for that.
I made up a nice wrap and one of the baked potatoes with butter, salt and pepper and green onion. It made a nice dinner. There are plenty of left overs for the wife and niece to enjoy as well as me. I added some Texas Pete's garlic hot sauce after this pic. That stuff is gold.
