Rick, We are all watching with great anticipation. I too love an apple smoked cheese but the string is a new one?
 
I did have a brain cramp and forgot to take some pics. Cheese vac seal already.

How long did you smoke the cheese? Or am I just a bad reader and you already said earlier? Can anybody give me some ideas on how long to smoke cheese? it will be my first attempt.
 
He smoked it for two hours. It's a personal preference really... but depends on how much smoke you have in your chamber. I smoke for 4 hours usually with apple. But I won't eat it for over a month... I hardly ever run out of smoked cheese so I don't have to rush it.
