Did two chuckies with varying sucess! Both are great, but different, Did one with Fresh CP & just a little salt. The other soaked in Yosidas overnight. Took them out and and let'em rest prior to going on the UDS. She was running around 250-260. Used hickory. Also had three Baby Backs on the upper rack.
Took the beef to 170 and foiled. took off and placed in cold oven for 1 hr. I was planning on pulling both. The CBP would not pull? HAd to slice. Love that pepper flavor. The other fell apart with a fork. Both taste great. Only ran one internal probe and had it in the bigger of the two. Not sure what happened. Oh well.

Those chuckies look killer to me. The only thing wrong is I'm not there to enjoy them with you.
