Smoked the chuckie as usual. Olive oil and spices. Cut up some red, orange and yellow peppers (green equals a night of heartburn) and red onion. Put the veggies in with 8oz beef broth, a cup of bourbon and a cup of water with some spices. Let that set up a few hours while the chuckie smoked. With about two hours left I added the veggies into the pan with the chuckie. When the chuckie was done I fired up the Blackstone to finish it into sandwiches.

I've not seen anything quite like this. Looks very tasty. The meat is Smoked in the liquid, then Veg added 2 hours out?..JJ

I might have described that poorly. Basically the veggies were marinaded in the liquid and then veggies and liquid were added together. The meat was alone most of the time.

That looks delicious! Nicely done. Like

Thank you very much. The leftovers were good straight outta the fridge too!

Thank you everyone. Just tried it on the off chance it worked. It did and momma loved it.

there is a recipe called Mississippi Chuck Roast. There are a few version but here is one from @TNJAKE . Pretty similar idea...and a good one

A bit different but sorta the same idea. I was hooked on the bourbon in the recipe.
