Chuckie Burnt Ends

So Jeff putting up his Smoked Chuck Roast Burnt Ends in his Smoking-Meat.com email had me suddenly itching like an addict for a fix.
So I went to my dealer and he had just what I needed, hooked me up good.
Two big thick Chuckies with a combined weight of 6.79lbs.
I'm gonna be feeling so good!

Been awhile since I've made these delectable bites of beef.
Here are two priors.

Now I like my Umami flavors so I add some Soy and Fish sauces to the Worcestershire.
And plenty of rub, gotta have some rub.

Into the smoker around 6am, dinner about 3-4pm.

And every early morning smoke demands a good breakfast to energize the cook.
Today it is Home Fries and Eggs.
Taters, Bacon, Onion and Bell Peppers cooked in fresh bacon grease.

Smoker is holding at 244°
5 hours in and IT in thicker one is 140°

And it was time for lunch.
Reheated myself another Chile Relleno with extra cheese, yum!

Well okey dokey here we go.

Menu
Chuckie Burnt Ends
Loaded Roasted Potatoes
Apple/Cranberry Sweet Slaw

Lets start by finishing documenting the star of the show.

I finished these on the grill, it made short work of setting the glaze.


Loaded Roasted Potatoes
2lbs New Potatoes, chopped
1.5 Bell peppers, diced
1 Onion, chopped
1/2C Bacon grease
1/4-1/2lb Bacon, crumbled
2T Garlic, minced
2T each fresh Rosemary and Thyme, minced
1T Tony C's More Spice
Preheat oven to 425°

Cut and parboil potatoes
Dump in large Ziploc with bacon grease, onions, herbs and Tony's
Mix well and dump in 9x12 casserole/baking dish
Roast till they start to lightly brown, then mix, repeat x2
Add bell peppers and bacon
Brown well and serve
