I had to make one now. This was a 24 hour make-N-bake.
I took out 30g of the water and added 30g of the shine.
Didn't heat the shine to remove the alcohol so didnt know if the bread would turn out.
Working with the S&Folds I found the cocoa powder to not be very friendly.
I did manage to get some gluten built up.
Did all the normal rise, rest bulk.
Sprinkle some rice flour on top
In the banneton for overnight in the fridge.
This morning spray the dough with water and into the dutch.
450* for 20 mins then 450 lid off for 30 mins.
Not happy the rice flour scorch.
Slice later.
