Chicken Wings on the WSM

This weekend the wife was away for an evening so I had the opportunity to whip up some wings as she is not a big fan. I started out with about 20 wings and marinated them with hot sauce, vegetable oil, pickle juice, Worcestershire sauce, garlic, salt and pepper for about 6 hours.

I pulled the middle section and lid off the WSM and got my coals lit in the charcoal ring. I set the grate right on top of the charcoal ring and began placing the wings on the grate and turned a few times for about 5 min to get a nice crispy outside.

After the 5 min I took the rack and put it back on top of the middle section and put the middle section and lid back in place. After about 7 min I turned to the other side for a remaining 7 min and then pulled the wings off at an internal temp of 165.

I got my sauce going with butter, garlic, Parmesan cheese, hot sauce, salt, and pepper. Tossed the wings in the sauce and then had myself a nice little feast.

Dude! Those wings look amazing. My wife is not the biggest fan of any poultry on the smoker. I generally do chicken for myself. I may just have to give something like this a try. Thanks for sharing.

Looks good . I use pickle juice on boneless chicken breast . Makes a great sandwich . have to try it on wings .
 
I like to do similiar things with boneless chicken thighs on my big ole char griller. Ever smoke them, then deep fry them, then put em through a sauce? We've done that before, worth the hassle ..
 
Tom, we used to do them that way and then found this method. With the marinade having oil in it and then sitting right above the coals it really gives a nice crisp, and I enjoy the char flavor. I stay away from fried anything now just for health reasons. Cant wait to get my hands on a weber kettle with a vortex and do wings that way.
 
Fair enough! I should do some chicken thighs soon. I haven't made hot wings or any thing like that in a while. They get so messy when dogs are involved lol
