This weekend the wife was away for an evening so I had the opportunity to whip up some wings as she is not a big fan. I started out with about 20 wings and marinated them with hot sauce, vegetable oil, pickle juice, Worcestershire sauce, garlic, salt and pepper for about 6 hours.
I pulled the middle section and lid off the WSM and got my coals lit in the charcoal ring. I set the grate right on top of the charcoal ring and began placing the wings on the grate and turned a few times for about 5 min to get a nice crispy outside.
After the 5 min I took the rack and put it back on top of the middle section and put the middle section and lid back in place. After about 7 min I turned to the other side for a remaining 7 min and then pulled the wings off at an internal temp of 165.
I got my sauce going with butter, garlic, Parmesan cheese, hot sauce, salt, and pepper. Tossed the wings in the sauce and then had myself a nice little feast.
