Cherry stuffed Pork loin

Meat:      Pork loin, 2.6 lbs cut in a flat sheet

Stuffing:  cherry preserves, craisins, sautéed diced celery & onion, Stove Top Sage stuffing mix, fine bread crumbs

Wood:     Cherry (about 3 hrs of smoke)

Smoker:  MES 30 (240F for about 4.5 hours, I.T. about 157)

Cooked the celery and onion in a little oil. Salt / Pepper the loin after cutting it into a sheet. Spread out the cherries, veges, stuffing on the pork loin. Rolled and tied it up. Put some of Jeff's rub on the outside.

 

Finished product. It came out ok. A little on the 'wet' side even with all the bread stuffing and crumbs. Next time around I will used dried cherries. With them the flavor might also be more (or so I hear).

 
Looks great! If I may suggest pounding the meat with a mallet can tenderize but more importantly get a even thickness for rolling.

​Just for giggles, I have soaked raisins in rum overnight.

​Some folks might not enjoy a moist center to their pork loin.

I did one stuffed with a cranberry/tangerine relish a bunch of years ago. It turned out great...


I also stuffed one with cherries (dried cherries rehydrated in wine), but didn't smoke that one...


I used to do a lot of stuffed pork loins when I was cooking for ten. My favorite was stuffed with kimchi...
 
I'm gonna try one tomorrow.. Will take pics. I think some mushrooms and onion sauteed and a bit of goat cheese and some kind of herb.. rosemary perhaps.. or thyme.. I hope it turns out ok. Never smoked a stuffed loin lol. 145° I.T. I guess.. Maybe a little salt n pepper outside..
 
Prunes and apricots sound good. I have some semi-dried frozen ones from Trader Joes that might work.
