Butt, Burgers and Dogs

After quite a few days of rain, Friday turned out to be very nice. Time to fire up the Webers. Starting off with a 6lb bone in pork butt on the WSM. Rubbed it down with SPOG and dark brown sugar and paprika. Hot and fast with some cherry wood is how it’ll be done. After the butt went on it settled in so nice around 300* which is what I was going for. This was probably the easiest smoke I’ve done. I didn’t make one adjustment to the vents at all!

With the butt cruising right along and I’m doing my best to stay hydrated dinner time rolled around pretty quick. Better get the kettle going. Filled up the chimney with some Embers and into the kettle with a chunk of mesquite. The wife bought some fresh pre made burgers and after a quick dusting of Montreal Steak seasoning, on they go. Four minutes on each side then over to the indirect heat to melt some cheese. Throw some dogs on now and dinner is about done.

After dinner the butt is ready to rest for a bit before pulling and packing away for some lunches next week and the freezer.
