Brown Sugar Bourbon Chicken Skewers

Found this recipe from Malcom Reed’s website and hate to try. Started out with a family pack of boneless skinless thighs and trimmed off the excess fat and cut in the longest direction across the meat about 1 in thick. Coated them in McCormicks brown sugar bourbon 30 min marinade and let them sit in the fridge for about 3 hours. Once I pulled them out of the fridge I sprinkled with Jeff’s rub .

I then set up my kettle with an indirect heat setup and place the skewers over the hot coals to sear.View attachment 502425
Cooked them about 4 mins on both sides then moved off the coals to finish. Coated them with a Kentucky Bourbon sauce and served with green beans and mashed potatoes

Those are some nice looking skewers right there. Love thighs, especially marinated and grilled. The flavor is hard to beat.

He did call for McCormicks however the rub he used was a brown sugar, turbinado sugar and cayenne. I did have not have I ever heard of turbinado (come to find out it’s Sugar in the raw)so I went with Jeff’s 🤣

"Gourmet" sugars such as turbinado, brown rice syrup, palm sugar, or organic (you add the mix) are all .. ta da .. sugar.
Dextrose is also sugar. It just lacks the sucrose part of table sugar,

Hence why I went with Jeff’s rub. I had no idea what turbinado was until I googled it
