Found this recipe from Malcom Reed’s website and hate to try. Started out with a family pack of boneless skinless thighs and trimmed off the excess fat and cut in the longest direction across the meat about 1 in thick. Coated them in McCormicks brown sugar bourbon 30 min marinade and let them sit in the fridge for about 3 hours. Once I pulled them out of the fridge I sprinkled with Jeff’s rub .
I then set up my kettle with an indirect heat setup and place the skewers over the hot coals to sear.View attachment 502425
Cooked them about 4 mins on both sides then moved off the coals to finish. Coated them with a Kentucky Bourbon sauce and served with green beans and mashed potatoes
