I’m smoking this 13 pounder on my RecTec. Chamber temp of 225. I’ll test it when it reached an IT of 203. Light coating of mustard and Only salt and course pepper on this beef. I will NOT wrap it.

I had some room on the grate so I added some drumsticks that I cured in Pops brine.

I'm going to have to research trimming a brisket, I want to get this one week, assuming I don't end up needing to drop 50 +bucks on it. Rather get like a 9 pounder if I can find it. Only place with them around me is Gordon Food Services and their add says..

USDA Choice. Boneless. Deckle- Off. 3/4" Trim. and it's 2.99 a pound, 12.5 pound average. I'm don't even really know what Deckle off means. Or if that's worth buying. Oh Skelly teach me oh wise one!
 
Looks amazing B! Do the drummies get that "hammy" flavor and color like the Pops turkey legs? They look great!
