I found a beautiful prime brisket flat at Costco. I should've taken pictures of it before I smoked it, but didn't. It was very well marbled, and just looked to good to pass up. Only 2.5 lbs., and not very thick but it was beautiful. I smoked it at 250 until the IT got to 165. Wrapped it In butcher paper, and then took it up to 198 at which point it passed the old toothpick test with flying colors. I then wrapped it in a towel, and let it rest for about an hour and a half. Turned out wonderful! I cooked up my famous jalepeno corn to go with it, and cracked open a lovely Barnett Cab Franc. Cheers!!

Wow that's a juicy flat. I think the moisture is weeping thru my screen.

Point for sure

Terrific looking brisket.
...cracked open a lovely Barnett Cab
Must have been VERY good to open a Barnett! I had the 2014 last year in a tasting in Tampa. Can't find it out here in the Boondocks. Congratulations. Definitely a celebration.

That all looks delicious! I have never noticed a small flat at my closest Costco everything always seems large.

Barnett cab Franc is one of my favorite cab francs. 2015 is sold out, but 16 coming soon! Beautiful vineyard.

Ya, there were only 4 or 5, and they were in the prime section only. I almost passed because I thought it would be too thin. Worked out ok though.

How long for 165 and 198?
Well, It took 7.5 hours total. I don't recall the time break at each temp. Then I wrapped it in a towel, and let it rest in the oven for 1.5 hours, so 9 total.
