I found a beautiful prime brisket flat at Costco. I should've taken pictures of it before I smoked it, but didn't. It was very well marbled, and just looked to good to pass up. Only 2.5 lbs., and not very thick but it was beautiful. I smoked it at 250 until the IT got to 165. Wrapped it In butcher paper, and then took it up to 198 at which point it passed the old toothpick test with flying colors. I then wrapped it in a towel, and let it rest for about an hour and a half. Turned out wonderful! I cooked up my famous jalepeno corn to go with it, and cracked open a lovely Barnett Cab Franc. Cheers!!
