Work week goodies: a small brisket flat and a rack of baby backs.
Using my WSM. Post oak for smoke. 225 degrees. Brisket took 8 hours, the rib 4 hours.

Baby backs look just right. I don't eat much pork these days though. So pass me a couple bones along with some of that cow meat.
 
Both look really good, beautiful smoke ring on both, but the bark on that brisket is to die for. Excellent job Justin. Heck, this is too purdy to even make a joke about dem tooths :emoji_laughing:
