I've been buyin my cheeses already shredded. I recently purchased a brick and shredded my own. By far the brick had a lot more flavor than the already-shredded.
I just wanted to pass this on to others.

I discovered this as well. What happens if you shred the brick and put in a baggie? It sticks together. The preshredded stuff they coat with a light wax so that it doesn't stick...but it also locks in flavor IMO.
 
yes its way better have been buying the big blocks at sams and shreddin my own too
