Started yesterday by peeling slicing and salting the E.P. then pat in dry, into some flour, then an egg wash, and last but not least a 50%50 blend of cracker meal, breadcrumbs, and of coarse some grated Parm. cheese. Then did a quick fry in Olive oil, pat off the excess oil and placed the slices on cookie cooling racks, let cool, cover with paper towels and foil, then into the refer overnight. I used to do it all the same day, but it's to much work for my back these days, and waiting until the next day doesn't hurt the outcome one bit.

I don't know how to cook small, it's a Dego thing, I got out my Lasagna pan and got to the construction portion.

It's basically like making a Lasagna, kinda sort'a.

I spoon in some sauce, I used Stanislaus 711 that I jazzed up, along with some Stanislaus Ultra Premium Paste Sauce, that I left bone stock. So it goes like this Sauce, the fried E.P. sauce, Freshly grated and store bought Parm, some fresh torn basil, then I scatter some toasted Pine nuts. The next layer goes the same way, with the addition of some shaved Parm. Asiago, Pecorino Romano, and a little grated Mozzarella. I did four layers, the last layer gets topped with some sauce, and all of the above cheeses, and more torn basil, I normally add fresh Parsley to the top as well, but I screwed up and bought Cilantro by mistake, oh well I'll grab some tomorrow for the leftovers.

This turned out amazing, with the three cheese blend, I normally just use Parm. I'll be using the blend from now on.

Pictures will be loaded soon, I'm typing this on my laptop, then will insert the photos from my phone.

Thanks for looking.
Dan.

Wow Dan! That looks amazing! I never had eggplant parm, but I love fried eggplant and I know I would totally hammer this stuff!

Thanks for posting! Now a have a new thing to try!

Brother I could HURT myself eating that! Yum!
I did last night, I kinda have a little head cold going, and after I cooked and ate I passed out for the night. I slept all night which is extremely rare for me these days. LOL!!!

I don't eat EPP very often as in years since ... but your dish has me thinking it might be time.
I love the stuff!!!
This sounds weird, but cold eggplant sandwiches on a sourdough roll with a thermos full of hot home made beef bone broth with two shots of bourbon in it. Add in, while sitting in the goose pit or duck blind, or trolling for King Salmon in the ocean, is my absolute definition of heaven. It's the perfect deer camp, or any camp food for that matter. Make it at home, eat one hot supper out of it, than the rest for sandwiches.
YUM!!!

The second week of November, we are going out to the coast, (Bodega Bay, CA) with a big group with four boats. 10 traps per boat, 4-6 people per boat for the Dungeness crab season opener. The limit is 10 crap per person. (We always limit out.)
As long as Ma Nature allows us to get out on the water. We are a seasoned group, so unless it is completely blown out we can always find a place to get out crab pots wet, even when a lot of boaters are staying in the harbor.
The memories that you just jar'd from my foggy mellon, I'm gonna have to make up another batch to bring up.

WE ABSOLUTELY LOVE THE STUFF IN OUR HOUSE!!!
Dan.

Smoked eggplant Parm is really good as well, just make it like explained above, and throw it in the smoker at 250-300 until the sauce and cheese get all happy, and bubbly.
Two to three hours is what it normally takes at the lower temps.

Eggplant takes on smoke really well.
Dan.
