Bresaola weighed this morning. I was going to leave another week but i had to look.

Feels looks and taste great. I need a slicer i guess. UMAi did it again.

I'm sure once i cut into it more the color will change, these are end cuts.

Nepas, did you let that dry out to 40% weight loss before you slice it?
I only weighed this just because. Im not a big fan of following books on what to do. I can pretty much feel how its going.

Well i dont want to break my arm patting myself on the back. But it was very good and its all gone.

When we get back from Germany i gotta get back on the sausage making train again.
