I can't wait to try the bresaola I'm currently curing right now. I think I will let mine go for 40% weight lost and see how it turns out. I saw some of your sausages that you made, looks awesome. Wish I could be as good as you at making sausage. I can't wait to try to make some of my own. Just bought a manual vertical sausage stuffer, definitely will try to make some salami sometimes.
Well i dont want to break my arm patting myself on the back. But it was very good and its all gone.
When we get back from Germany i gotta get back on the sausage making train again.
