This was todays prime cook, came out only slightly better than perfect. Put the SnS on medium low with some hickory chunks and just took a shot with vents half open, two probes in the meat.

I tested my probes right before putting the prime on the grill, had everything else ready to go at the drop of a hat. With plenty of advance warning once the prime was at the pulling stage I was ready to spring into action.

While that hunk of goodness was resting I pounded out some fresh linguini with dried tomato Alfredo sauce and some creamed spinach. My plate.

That was the two end cuts, I always save the best for last. I'll cut this three pound hunk of perfect prime in half. one for surf and turf in the sous vide tomorrow, the other half for Freezermart.

Right after dinner it was still 112º in the shade so I took a little dip with Bob, even did a few laps in the pool. Just another day in paradise, thanks for lookin'! RAY

Ray that looks fantastic!! I really love prime rib and that is done just right for me. I’d tear a couple pieces of that up.

Just as your pics showed up, my neighbor fired up his grill and added some hickory.
It was like "smellovision" !

Thanks Jeff! If I ever cooked up a hunk of prime that turned out half gray I'd most likely take a butter knife and commit honorable seppuku. RAY

Thanks Chile! I went with straight CBP and kosher salt, I don't get into any funny business when it comes to prime. This had a wonderful flavor and the smoke came thru without being overpowering. RAY

The horseradish on the right side of the pic will make your head sweat FB, I like to mix it with the deli style stuff to tone it down it a hair, it's still got some kick. RAY
 
Nice looking prime there guy. It seems that beef and horseradish go together as does hotdogs and bake beans.
