i think that’s what it’s called!

Anyway, was going to do this on Christmas, but didn’t have the time, so I did it today.

220 on the smoker with apple and cherry. It got close to done before the smoker dropped below 200, so I popped it in the oven to finish.

This was the juiciest pork I’ve ever made, or eaten.

Beautifully done! My skinny a$$ is staying in the warmth tonight.Cooking chops just like your slices in a CI grill pan w/scalloped taters(from a box) and green beans.My Brutha frum anutha mutha...;)

Sounds good. Those are some thick slices. I just cut 2 rib pieces to deliver to the in laws tomorrow.

Edit: the potatoes were sliced thin and baked at 350 with EVOO and SPOG.
 
Looks great! It's called a French rack of pork. I had planned on one for Christmas dinner, but wound up in the hospital, so it's sitting in the freezer to be enjoyed another day

I started trimming, and decided to take it all off to get more rub to the meat. I guess it worked out!!!
