Boiling my turkey carcass for stock. Anyone else do this?

I started boiling my left over turkey carcass for stock earlier this morning and the house smells GOOD!

Since I cured the bird, it smells like I'm cooking a ham, so when my mother in law dropped by, she was disappointed to learn I was only making stock. :biggrin:

With the stock, I'm going to make some turkey noodle soup and turkey pot pie. Any other left over turkey ideas?
 
Hey Buddy, getting any Rain ?        When I Spatchcocked my birds I took the back bones & necks  and boiled them all day and made a great stock. It will be good

Ha! Rain? More like close to a flood. It's stopped for a bit, but more coming. I was going to make some snack sticks and SS this weekend, but I think I'll hold off.

I've made stock with chicken parts, but I've never done it with a carcass or parts that have been cured. The smell is awesome! I plan to simmer it for quite a few more hours.
 
Let me know how it turns out, never used cured parts ?

Yea, every bird we smoke or bake the carcass gets boiled down for stock ! The best stock ya can get IMO ! Be curious how yours turns out as Gary said with curing the bird !
 
CB We do it all the time.A little trick to keep the broth clear bring to a light boil then simmer it.

i always save the neck and giblets and boil down w/ the carcass for stock .then use left over meat to make turkey an sausage gumbo.

Turkey and dumplings is always a favorite at our house.

Get you ice cube trays out and freeze any leftover stock. Freeze and vac pack the cubes. If you pour from a measuring cup count how many cubes equal a cup. Right that number on the bag. Then if you need a cup or two count out how many cubes you need.

That's the only reason we have ice trays at the house. Now, measuring how many cubes to a cup, that's just pure genius! I hadn't thought of that before!

Not stock, but my wife has been making a turkey carcass soup with the bones from a turkey for years.  It sure beats slaving for long periods of time carving all the meat off the bones.   

when we are tired of eating turkey any leftover turkey meat goes in the soup too.   We like thick, meaty, hearty soups.  

I'll post a recipe if there is interest, but I'm not sure how closely she follows it.   Her soups kinda get out of hand control in a good way as I've had to upgrade her soup pots twice now, she's up to a 24 quart pot now.   
 
Since we enjoyed "Turkey Day" yesterday, today is stock day.... All the stuff that was put in the roasting pan, goes into the stock... Plus other stuff I imagine.... but I'll never know because what Bride does in the kitchen is "secret".....

But I got a picture of the start...... It sat on the back porch all night at 23 degrees...

I used all of mine last night making turkey and dumplings. OMG! I shall do that again! Thought about posting it, but not sure where it would go. :drool
 
Bride used the stock from a bird we smoked this summer to make the gravy, noodles thing she makes... we do turkey about 4-5 times / year..

Post it right here.... I'll know where to look......:biggrin:

You had better start a new thread and include the recipe.... Ask Kevin where he posts his Gumbo.... May as well get it all together.... OR have Brian start a new forum for "Soups and Stews"....

Yep, most definitely cured! The other is tough and rather chewy! :biggrin:
