Boiling my turkey carcass for stock. Anyone else do this?

Here's my wife's Turkey Carcass Soup.   

consider this a guide only, as she does not follow recipes very closely anyway.  
 
Nothing to waste in this house even the dogs don't want the bones. We do it all soup, dumplings and take left over turkey meat sometimes chop it up add some chopped carrots and celery put in pan with some oil then make white gravy like in chip beef gravy eat it over toast mashed taters or rice.
 
I started boiling my left over turkey carcass for stock earlier this morning and the house smells GOOD!

Since I cured the bird, it smells like I'm cooking a ham, so when my mother in law dropped by, she was disappointed to learn I was only making stock.

With the stock, I'm going to make some turkey noodle soup and turkey pot pie. Any other left over turkey ideas?
I did that yesterday and make turkey noodle soup and some boudin .
 
I prefer the dark meat on a turkey, so that's what I eat when it's done and hot.  Then I cut up all the white meat, freeze it in quart containers, and use it for turkey enchiladas.  I certainly boil the carcass, and freeze the broth in 1 pint containers.  It's excellent for making flavorful rice.
