I had not considered a Blackstone until a friend of mine had one for sale for $40. I got it home and cleaned up and now I can begin to experiment. I plan on doing some steaks and would like some advice. Cook it on high? Sear it on high and move to the cooler side of the griddle? Something else? Steak is too expensive so I don't want go screw it up.

I will probably just do burgers and other meats until I get the hang of it.

I don’t use it for steaks either. But I’d recommend starting of on medium heat even maybe a little lower. And don’t try to cook a lot at once the first few times. It can be overwhelming if you aren’t familiar with cooking times
 
Which one did you get ? Size , old / new ?
They make great food .
Cook up some bacon to start . Give you an idea of the hot / cold spots and how the drainage works .
I have the original 28 " with the front grease drain . If that's the one you have , be advised that they can make a mess on the patio or deck . The grease , or some of it runs down the leg .
I saved a plastic butter tub , and stick that leg in the tub so it catches the grease .

So what model do you have ?
 
First cook? Bacon and smash burgers!
If you have a grinder? Grind you own from some chuck and rib meat!
 
Thanks for the responses. I bought mine from a friend. I think it is the 28 inch. Two controls, four burners. It took a little cleaning and now I need to get some avocado oil to get it cured. I fired it up and checked the temp with an infrared thermometer. It maxed out at about 460 degrees. Is this about right?

Right , but front or rear grease drain ?
I have the original style with the front drain . The newer one is an improvement with the drain in the center of the back .

I never checked the surface for heat . Look at the flame . Should be blue . Not yellow . 20210430_133727.jpg

If you want to do a steak have 1 side blazing hot and the other on low. You put your steak on to get a good crust then move it to the low heat side for a few while the high heat side recovers. Then repeat the process until you get the desired temp and rest it. While resting you can sauté some onions and mushrooms or whatever you like.

But as for a 2nd cook Id do Bacon Eggs and Pancakes.

For a 1st cook Id do a loaf of bread. Lay the slices on the whole thing then flip at the same time and in the same pattern that you placed them down. This will show you the hot spots of the grill.

Great advice. Now if I can only remember this when I eventually get one myself :)

I don't use the black stone for steak. That is for the grill IMHO. Burgers, taters, stir fry, bacon and eggs, pancakes, sausage, etc. That's where the black stone shines. Small learning curve. But very much worth it.

I have a small table top Halo, Nice as it is easy to store.
While, I am not a big fan of steak (I prefer a slow cook (200 Degrees) then reverse sear with butter on a hot grill.
As for the flat top, it's a breakfast machine, great for whipping up breakfast for a crowd. things we like on ours:
- Cheese Steaks (Venison, Beef, Chicken)
- Smash Burgers
- Stirfry/Fried Rice
- Grilled cheese, ham and cheese, other sammys
- Quesadillas
- Seared Tuna
- Blackend Fish

Try anything and enjoy it!

Mine has the rear drain. Other than that it looks just like yours.
