I have always loved Chef Paul Blackened Redfish seasoning but getting hard to find in stores. I did a blacked catfish using Zatarain's New Orleans Style Blackened Seasoning last night and man was it salty! I can get chef Paul from amazon but maybe time to just make my own? Anyone have a recipe that they really like?

My town is pretty small but carries the stuff. Blackened Redfish Magic? There's like 5 or 6 different.
