I have always loved Chef Paul Blackened Redfish seasoning but getting hard to find in stores. I did a blacked catfish using Zatarain's New Orleans Style Blackened Seasoning last night and man was it salty! I can get chef Paul from amazon but maybe time to just make my own? Anyone have a recipe that they really like?

Homemade seasonings are so much better. I started making my own taco seasoning about a decade ago and it blew me away. Makes the store packets taste like crap.

I'm interested in both of these... I just ran out of Old Bay Blackening and I too would also like to get off the store bought seasoning packages for tacos... Any way you can share that recipe as well with amounts per lb....
