Blackened Seasoning Recipe

I have always loved Chef Paul Blackened Redfish seasoning but getting hard to find in stores. I did a blacked catfish using Zatarain's New Orleans Style Blackened Seasoning last night and man was it salty! I can get chef Paul from amazon but maybe time to just make my own? Anyone have a recipe that they really like?

Homemade seasonings are so much better. I started making my own taco seasoning about a decade ago and it blew me away. Makes the store packets taste like crap.
 
I'm interested in both of these... I just ran out of Old Bay Blackening and I too would also like to get off the store bought seasoning packages for tacos... Any way you can share that recipe as well with amounts per lb....

My old standby has been
1- diamond salt
1- paprika
1/2-1 garlic
1- coarse black pepper
1/2 - white pepper
1/4 - green pepper (sometimes)
1/4- mexican oregano
Red pepper to taste. Lately it has been a mic of Chipotle and Chile de Arbol.

The ole justin wilson recipe was equal parts salt, red, black and white peppers

This is the one I have been using a long time, Solid. Use it on ground beef, brisket, pulled pork - tacos.

Taco Seasoning

2 tablespoon chili powder
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1 teaspoon paprika
3 teaspoons ground cumin
2 teaspoon sea salt
2 teaspoon black pepper

INSTRUCTIONS

Mix together all ingredients. Store in an airtight container until ready to use.

When you are ready to use use your Homemade Taco Seasoning, use about 2 tablespoons per 1 pound of meat. Feel free to add more or use less, I just found that to be the sweet spot 🙂

Brown your beef and drain off fat. Sprinkle seasoning evenly over meat and add ⅓ cup of water. Simmer until water is adsorbed.
