Biltong question

Want to try.....

LEM dehydrator low settings is 95 f.

Would that work?

Dehydrator in garage if that makes a difference.

Well, bottom round in the dehydrator at 95.

2% salt by weight, apple ciders vinegar, ground toasted coriander seed, ground pepper corn and crushed red pepper.
