Sliced a pork belly into 1" strips, slathered in mustard and seasoned with American Stockyard apple bbq rub. Smoked at 250 til an IT of 200, then cranked up to 350, sauced with American Stockyard Harvest Apple and cooked another 15 minutes. Let it rest for 5 minutes and cut into cubes. Delicious!
