Fresh belly from Zion Market, pre-cut in to 1.5" strips. Seasoned with salt, garlic and black pepper. Then grilled using the baskets for indirect at ~375°f for about an hour. Once they reached an internal of about 195°f-200°f I brushed them with a blend of real maple syrup and soy sauce. (Salty/sweet is heavenly) I gave about 5 minutes between and repeated this twice. After I pulled them the rest was brushed on.

After a 10 minute rest in a sealed bowl I slices them up about 3/8" thick.

Delish to me and the wife likes it! (Pork belly after all)

The exterior was crispy and the interior melted in your mouth. A nice salty belly with hints of sweet.

Sorry, no final pics but it was served in "doctored" Ramen from Zion Market.

Thanks! Other than curing it this is my favorite way to do the pork belly. A touch sweeter would ha e been good, so.etimes I don't check my notes and wing it. This was one of those times. Unfortunately it's all gone!
