Read the adds weekly, I found t-bone, NY strip, and Chuck roast for $5.99/lb last week. We use coupons too, Kroger sends us a lot, picked up an 8lb butt 2 weeks ago for $1.03/lb and spares for $1.49.

Yes? Back in day in College, went to a Fed Slaughterhouse. It's kind of long winded... but here is an excellent article about how beef pricing actually works, and a breakdown of where the money goes.

By The Numbers: How Much Beef Can You Get From A Cow?
Turning a 1,500-pound cow into a freezer full of steaks, roasts and hamburgers is more complicated than it might sound. But if you're fed up with pricey…cowboystatedaily.com
Depends on the lean to fat ratio . If it's the 10 lb. tube of of 73 / 27 ,,, that's a BUNCH of fat that renders out .We just got 10 pounds of ground beef for $3.99 /lb…that’s a pretty god price for around here…

I buy the 81 / 19 . Just got 20 lbs. for $4.19 a pound . Good clean beef without a bunch of rendered waiste . That gives me around 100 lbs. in the freezer . If it hits a certain price point I buy it .
These came from Friona Texas . Cargill meats .
pork belly tomorrow for $2.50/ lb
My son in law does alot of work in packing plants dealing with packaging and has installed some robotic lines. That has it's perks...takes a bit of trimming though as there's quite a bit of rib meat still attached... but makes great chef snacks!Where is that at ??
I didn't realize that ungraded beef (regardless of the source) could be sold in retail markets. In the States, meat processors can process non-graded beef but it's treated as an individual order for specific customers who usually buy a steer from a rancher and have it processed. This week one of our local grocery stores (No Frills) was selling Ungraded Beef Rib roasts from Mexico.
You know more about it than I do , but some retailers have a " No Roll " program . Some of the beef I buy at GFS is no roll . Just means it has not been graded , not that it wasn't good enough to make the grade .I didn't realize that ungraded beef (regardless of the source) could be sold in retail markets. That's been my experience with most beef I've had in Mexico. Older, tougher steers, best braised. The better steakhouses advertise that their beef comes from the US or Canada. This week one of our local grocery stores (No Frills) was selling Ungraded Beef Rib roasts from Mexico. 1/2 price of other retailers like Costco. Very skeptical of quality. Found out that beef from Mexico is from heat-tolerant cattle or older cows and bulls rather than the specific European breeds commonly raised for marbling in North America, leading to differences in taste and tenderness. This beef is best cooked in a braising method. Also, Mexico is know for using historical use of growth promotants.
So, the store is selling it as Rib roast...but suggests stewing the meat or using it as ground beef. Yikes!!! I will stick to North American produced meat.
OUCH! Will the price ever stop rising... I saw a 20lb SRF wagu brisket for $200. Costco might get that high soon.Saw this in Costco the other day. And this is the price for Choice.
