It's kind of long winded... but here is an excellent article about how beef pricing actually works, and a breakdown of where the money goes.

Yes? Back in day in College, went to a Fed Slaughterhouse.
Experienced the slaughter from live cow to being cut down .
Its a very extensive process to get Beef on the huff to cut down.
On top of that now ?
The high increase costs to get that cow to slaughter.
Its due to Economic increased costs to produce cattle.
Call it what you want ? Not going there.....
My work experience being in Grocery Sales for over 30 yrs, learned alot from the butchers from multiple food chains, But basically they all say the same.
IMO: There is too many steps to see the meat in yur local store.
Also see some wild stuff working kitchens after college. Not going there either ...
ELF

We just got 10 pounds of ground beef for $3.99 /lb…that’s a pretty god price for around here…
Depends on the lean to fat ratio . If it's the 10 lb. tube of of 73 / 27 ,,, that's a BUNCH of fat that renders out .
I buy the 81 / 19 . Just got 20 lbs. for $4.19 a pound . Good clean beef without a bunch of rendered waiste . That gives me around 100 lbs. in the freezer . If it hits a certain price point I buy it .

Ya have to figure out your own price point on what eating beef is worth it. It's different for all of us. Being expensive sucks, but it's not changing anytime soon. Sometimes those cravings get in the way lol!
