Well, why not?
Started with 3 lbs ground beef, 1 lb. ground pork, and couple of chunks of smoked pork belly that I didn't deem lean enough to slice into bacon. Instead, I had cut that slab into roughly 4 oz. chunks and froze them. Then here cut them into small lardons. In retrospect, next time I would hand chop those into even smaller pieces.
Mixed with a couple small, white onions, minced garlic, S&P, and a few tablespoons of Eat Barbecue-The Most Powerful Stuff rub. (I also had about of cup of leftover sloppy joe meat, so that went into there, too.)
Shaped into loaves and into the fridge overnight.
Onto a couple frogmats and smoked indirect with a chunk of pecan at around 275°-300° for a couple hours.
Applied ketchup mixed with more rub, about 20 minutes before they were done.
And plated. Turned out very good, although it's hard to mess up meatloaf. It looks a little mealy in the pic, but they were very moist. I think the bacon lent another layer of flavor, without standing out on its own too much. We had one, and I gave the other to my daughter's family who live nearby.
