It all depends on how clean the butchers & meat-cutters cut the meat from the bones!!!
I get my Beef Ribs when I buy a batch of Prime Ribs, by cutting my own Ribs from them, and leaving some meat on the bones. I pay whatever the Roasts cost.
When you say "$3.79/LB", that's fine if the guy leaves some meat on them.
However most of the time they not only cut the meat right up to the bones----They even cut notches in between the bones to get every last little scrap out from between the bones. That's Disgusting in my book, so what I'm saying is $3.79 would be good for a pound of bones with maybe 50% meat on them, but $3.79 is too much for 95% Bones & 5% meat.
