How long do I need to smoke this to make enchiladas out of it? So I guess I need to know what temp I can chop it up at or pull it like pork. Never smoked beef.

Take it to 200 and let it rest in a cooler wrapped in foil and a few towels for a few hour then pull it.
 
Be sure to season it up good with some mexican spices and maybe put some broth under it in the smoker with some onions - you can cook it down and add it to the enchiladas
