Figured I'd go ahead and post my Cajun Turkey Rub recipe for you guys... Thanksgiving is just around the corner!!

Indaswamp's Cajun Turkey Rub

1/4 cup Paprika
1/4 cup Sea Salt-No table salt (med.~fine grind; I used mortons sea salt)
1 TBSP. + 1 tsp White Pepper
1 TBSP. + 1 tsp Black Pepper
1/8 cup garlic powder
1/8 cup onion powder
2 tsps. dried thyme leaves
2 tsps. dried oregano leaves
2 tsps. dried sage leaves

( I put all the herb leaves in a coffee grinder with a pinch of salt and chop them up finely. The salt helps to separate the sage leaves. )

1 tsp. ground bay leaf
1/2 tsp. ground sassafras leaves (file' powder)
1/2 tsp. ground marjoram leaves
1/2 tsp. ground coriander seed
2 tsps. Creole seasoning (I used Cajun injector seasoning mix)

Makes just over 1 cup of seasoning. I just put it in a left over shaker. This is good on chicken too, but really makes a Turkey IMO!

Gonna give this rub a go. Sounds delicious
 
Just put the bird on. I'm using hickory and some of the wild black cherry I cut back in May. Been 7 months so the chunks should be well seasoned by now.
