Barky bark and the funky bunch

    Woooo boy, looking good today. Brought the smoker to hocking hills this weekend. Made Dutch's baked beans last night. Today is pulled pork. Made my rub with turbinado sugar to try for better bark this time. Looks like I'm right where I wanna be.

    Looking tasty,I find taking off more or all fat gives better bark.

    Well folks, sorry I didn't send pics of finished product until now. I had a couple days of mourning for the loss of my smoker during this cook. Good news is I saved the butt. Bad news is my smoker is dead. I tried adding some lit coals part way through the cook, and didn't realize I forgot to put in a drip pan. The drippings got into the top pan, which had a hole in it, and the whole thing went up in flames, literally six feet high. I could see through the sides of my smoker when it was all done. So looks like I'll be upgrading. Think I'm going to go with the WSM.

    Anyways, here is the finished product. I had to finish off in the oven. BTW, also made Dutch's baked beans the night before. AMAZING!
