I got the idea from an instagram video, but i used different ingredients.

I removed the top from a wheel of brie. Tried to get some cheese off with the rind, kind of a cone shape.
Spinkled fried bacon bits and chopped roasted tomatoes (home grown) in the cavity.

Set back the top

Baked at 350 until the insides melt. About 30min here...

Top off...
Stirred a bit to bring bacon and tomatoes up

On a slice of fresh baguette

Looks great. I did a baked brie in puff pastry in my restaurant. I topped a wheel with Ginger Marmalade, covered in pastry an baked it. Good stuff....JJ

I could see adding some heat too, Some chipotle or chili powder.

I know brie goes well with fruit "salsas" but we like the savoury dishes savoury and leave the sweet components for deserts . With the odd exceptions ofcourse (peach blue cheese salad is one).
