Yes, if you use the part of the butt that has the fat cap it will taste more like belly bacon. Belly bacon has more fat in it and BBB is a little chewy because it's leaner. I am not a bacon expert, but have experimented with using a lot of the fat cap in making BBB & it does change the taste.
