Just a thought....

- Slice the potatoes like you have, layer the slices on a sheet of foil, close it over, punch holes in and place in a non-heated smoker.
- Add smoke using only a smoke tube/maze.
- You might want to toss the potatoes in a little oil to keep their color and add seasoning to them.
- The foil package should keep the slices flat.
- How long to smoke is a crap shoot? I'd try 45-60 mins first and if not done, just repack and relight the smoke generator.

I like the coat in oil to keep color. Now i just thought i could layer in between wire racks to keep their shape, in the smoker. And could keep an eye on them better also
