I heard about this recipe on a Malcom Reed podcast, and had to try it.
Hot Italian sausages are stuffed with mozzarella sticks, wrapped in two strips of bacon, and dusted with rub before going on the smoker. Serve on a bun, with whatever toppings or sauces you'd like.

The first photo shows the assembly, each sausage at a different step of the process. The second photo shows them well into the cook. By this point, I couldn't wait for them to finish! I was using lump hickory for smoke on the WSM, cook time less than two hours at 275F. Good eating!

That has to be a great combo. Looks like Sunday game day food!

Great idea, and if you don't have Mozzarella sticks on hand just cut some strips off a block of mozzarella or whatever cheese you have!!!! I missed that podcast but I'm saving this idea for sure. Thanks

Looks good, I think I saw the Malcolm Reed video of these. Gonna have to put this on the list.
